Colcannon - Irish Peasant Food At It's Best

After reading about colcannon on one of my favorite blogs, Squash Blossom Farm, I was excited to try it. Colcannon is an Irish peasant dish of manly potatoes and kale or cabbage.
I tried it recently and it's delicious! It tastes like mashed potatoes but has a bit of kale flavor that makes it more exciting. Jon was nervous to try it at first since it looks like so much kale but he loved it! Topped with a bit of butter (or cheese as Jon likes it) it's simple food at it's best! Here's how I made my version of Colcannon (which might not be exactly traditional).

-Boil a bunch of scrubbed potatoes until almost tender

-Add a huge amount of chopped kale to the cooking potatoes when the potatoes have a few minutes left to cook.

-When the potatoes are tender, drain the potatoes and kale and put them in a large bowl.

-Mash lightly with a potato masher.

-Add chicken broth (or you could use milk), salt, pepper and butter (or butter substitute) to taste and the right consistency.

-Serve hot with additional butter and cheddar cheese if you like.
